Food safety incidents emerge endlessly, and food safety has become the most concerned topic among all industrial products. People need more protection when buying food to increase their willingness to buy. In order to ensure food safety, the government has promoted Taiwan Agricultural and Food Traceability System (TAFTS) since 2004 and established a food traceability system based on agricultural products. Based on the characteristics of the Taiwan agriculture and food traceability system and various theoretical foundations, this research hopes to understand whether the Taiwan agriculture and food traceability system emphasizes process transparency, traceability, and third-party certification can increase consumers’ trust in food safety. And based on the theory of consumption value, it discusses the influence of functional value, social value, and social environmental value on the consumer's choice of traceable agricultural products, and discusses the factors that induce consumers to purchase the traceable agricultural products from the perspective.
This study adopted a questionnaire survey method. The study found that process traceability, transparency and third-party certification have a positive and significant impact on food safety trust; food safety trust has a positive and significant impact on functional value, social value, and social environmental value. Functional value, social value, and environmental value have a positive and significant impact on purchase intention. Finally, based on the research results, it puts forward specific suggestions on government governance, and provides directions and suggestions for future research.
