  • This caste studies follows the implementation of Lean principles in a small fast-food company in Taiwan. Emphasis was placed on the introduction on several Lean tools, namely: Value Stream Mapping, Lean waste analysis and implementation of Lean principles over the course of six months. It was found that Value Stream Mapping can be beneficial in bringing to the forefront operations’ information as well as material flows as well as details on each of the processes, on which management can react and apply Lean principles and measurably improve operational performance. Discussion and limitations are then discussed at the conclusion of this paper.
