生鮮蔬果因採收後容易損壞,常經由冷鏈運銷供應至市場,但由於其易腐壞的特性、需求的不確定性,以及價格波動性,複雜的供應鏈使蔬果在進入市場前的損耗率高達20-60%。根據財團法人中技社資料,台灣在2018年蔬果的供應鏈損耗量約為116萬噸,約佔總損耗與浪費的65%,顯示出蔬果在供給至市場前之供應鏈階段的損耗為主要的損失缺口。
蔬果大量的損耗造成經濟與蔬果供給量的損失,然而在複雜的冷鏈蔬果供應鏈模式下,各個採收後的供應鏈階段都可能造成蔬果質與量的損耗,損耗率常居高不下。
因此本研究針對農業合作社 以及一般小農之冷鏈規模進行冷鏈模式探討,採特性要因分析法找出5大供應鏈階段中造成蔬果損耗的因素,彙整成關鍵問題,再利用萃智理論之矛盾矩陣求出創新原則探討改善方法,最後透過實驗或相關應用,研究改善冷鏈蔬果供應鏈損耗解決方案之可行性 。
Perishable fruits and vegetables are prone to damage after harvesting and are often transported to the market through a cold chain distribution system. However, due to their perishable nature, uncertain demand, and price volatility, the complex supply chain results in a high loss rate of 20-60% before entering the market. According to data from the CTCI Foundation, Taiwan experienced approximately 1.16 million tons of losses in the fruit and vegetable supply chain in 2018, accounting for about 65% of the total losses and waste. This highlights the significant loss gap in the supply chain stages before reaching the market.
The substantial losses of fruits and vegetables result in economic losses and a reduction in the supply of fruits and vegetables. However, in the complex cold chain fruit and vegetable supply chain model, various stages after harvesting may impact the quality and quantity losses of fruits and vegetables, leading to consistently high loss rates.
Therefore, this study focuses on exploring the cold chain model for agricultural cooperative association and small-scale farmers. It employs the cause and effect analysis method to identify factors causing fruit and vegetable losses in the five key supply chain stages. These factors are then consolidated into key issues, and innovative principles derived from TRIZ theory's contradiction matrix are used to discuss improvement solutions. Finally, the study discusses the proposed solutions through experiments or applications to confirm the effectiveness of mitigating losses in the cold chain fruit and vegetable supply chain.
