  • 在當前數位化、多元化的時代背景下,餐廳不再僅是提供餐飲服務的營業場所,而是需要透過業者創造附加價值以超越傳統產品導向的經營模式,從而增強顧客忠誠度並激發二次消費。隨著消費者需求不斷演變,餐飲業競爭加劇,創新已成為企業生存與成長的關鍵因素。然而,過往研究鮮少探討服務創新如何驅動顧客旅程優化這兩個理論之間的關係。因此,本研究採用質性研究中的個案研究法,基於「服務創新」與「顧客旅程」的理論基礎,深入探討豐舟餐飲集團的多品牌餐飲發展歷程,並分析其如何透過服務創新驅動顧客旅程優化的歷程。
    研究結果顯示,豐舟集團成功整合服務創新要素並有效的提升了顧客旅程,進而創造出服務價值。未來,餐飲業者應密切關注市場動態,積極推動創新活動,以靈活應對消費趨勢的變遷,從而在競爭激烈的市場中保持長期競爭力。本研究亦提供具體經營建議與策略,以協助餐飲企業在瞬息萬變的市場中持續成長。

    In today’s digital and diverse era, restaurants must go beyond providing food to create added value through innovative operations. This shift is key to building loyalty and driving repeat visits. As consumer expectations rise and competition grows, innovation is vital for long-term success. Yet, few studies explore how service innovation enhances the customer journey.
    This research uses a qualitative case study, grounded in service innovation and customer journey theories, to examine Rich Boat’s multi-brand strategy. It investigates how the company uses service innovation to elevate customer experience.

    Findings show that Rich Boat effectively integrates innovation to enhance the customer journey and deliver greater value. The study highlights the importance of staying market-aware and proactively innovating to remain competitive, offering practical insights for F&B businesses in a rapidly evolving landscape.
