烏魚之所以具有高度經濟價值,在於其成熟雌烏魚的卵巢經過鹽藏加工後可製成烏魚子。目前臺灣市面上烏魚供應來源可分為台灣海域捕獲之天然烏魚、台灣的養殖烏魚、以及從大陸、巴西、美國或澳洲進口的烏魚。面對三種不同性質的烏魚供應商,烏魚子加工業者如何以完善的準則評估,選擇關鍵之供應商,並發展成為長期合作夥伴以降低買方之交易成本、提升企業之競爭力,最終達到提高供應鏈績效之目標,乃是本研究所關切的議題。本研究將透過模糊德菲法與模糊層級分析法,以烏魚子加工業者為主要研究對象,探討烏魚子加工業者評選供應商之準則,並衡量各評估準則所占權重,以建立評估烏魚供應商之權重模式。
本研究結果顯示,烏魚子加工業者最重視的評估準則為「購買價格」與「產品品質」。因此,烏魚供應商必須提供新鮮、成熟度高之烏魚,並以合理的價格販售,才能吸引烏魚子加工業者選擇該烏魚供應商,並發展長期的合作關係。而烏魚子加工業者若秉持著同樣的評估準則選擇供應商,維持烏魚子的品質與口味,勢必能持續於市場中生存。
The history of making dried mullet roe has been lasting for more than hundreds of years in Taiwan and the dried mullet roe processors are mostly family owned small and medium-sized enterprises (SMEs). Most research related to supplier selection in evidence concentrates on the purchasing behaviors of large companies or standardized industrial products. Attention needs to be paid to family owned SMEs and how these companies cope with supplier selection when the products are not standardized industrial products. The objective of the study was to examine the criteria and the relative importance among criteria of supplier selection for family owned SMEs which produce dried mullet roe, and demonstrate the difference between supplier selection of dried mullet roe processors and standardized industrial products.
According to the ranking results based on the applying of FAHP, the evaluation weights of “price” and “quality” are much greater than other criterias. The result interprets that dried mullet roe processors give high emphasis on product while choosing suppliers. It also indicates that more attention should be pay to suitable price and superior quality of mullet by suppliers. It’s also the way to build a long-term relationship with mullet roe processors. If suppliers could follow this rule, it will benefit not only revenues but also sustainable running.
