從2020年初開始,受到新型冠狀病毒影響,消費者的健康安全意識隨著感染人數不斷攀升,餐飲業暴露於高飛沫、近距離接觸的高感染風險,業績飽受疫情衝擊。也因抗疫情況仍未明朗,民眾恐懼而減少出入公眾場所,餐飲業在此期間自然是進入冰河期,消費者外食頻率只會減少並不會消失。但顧客依然有用餐需求,業者也必須創造業績,因此最明顯的改變就是「宅商機」的爆發。這個改變,除了是消費型態的改變,更是整體餐飲產業通路結構的劇變。
本研究以長春蔬食連鎖餐廳現況及發展趨勢作分析,針對其連鎖餐廳處於不確定的大環境中如何應對與面對激烈競爭,經營管理者在導入過程中所使用的各種策略執行方法,作為未來經營管理上改善之方針。
From the beginning of 2020, affected by COVID-19, consumer's health and safety awareness is increasing with the number of infected people, catering industry exposed to saliva in the air. Very close to the risk of infection and business performance is impacted by COVID-19. Also, because the situation against COVID-19 is unclear, the public is scared and reduces access to public places. The catering industry has also freeze during this Epidemic, consumer dining out will only decrease and will not disappear. But customers still have dining needs, businesses must also create performance. Therefore, the most obvious change is the outbreak of "Stay-at-Home ". This change, in addition to changes in consumption patterns. It is a drastic change in the overall structure of the catering industry.
This study analyzes the current situation and development trend of Changchun vegetable and food chain restaurants, and how to deal with and face fierce competition in the uncertain environment of its restaurant chain. Various methods of strategy implementation used by managers during the import process, and as a policy for future management improvement.
