長期過分發展無煙囪工業,造成在地民眾原先擁有的日常生活休閒場景,已漸漸被衝擊而且其在地文化被忽略掉,對台南市所轄名勝古蹟所造成的衝擊影響層面也不容忽視,就觀光產業內涵來說,古蹟開闢為休閒活動場所,是一件對民眾日常生活中有意義的政策,在觀光吸引力的角度而言,美食不但是旅途中最基本的必須性消費項目,也是許多人在目的地選擇時的重要考量。台南市的觀光產業未受國內外的旅客的矚目,當中缺乏整體的規劃、古蹟腹地狹小、交通問題、美食小吃的宣傳、行銷企業化經營等不足,故本研究首要了解遊客對台南市古蹟旅遊與美食小吃的期望重要程度與實際的感受體驗品質的重要構面,並探討旅遊體驗品質影響知覺價值,滿意度與遊後行為的關係,最後對台南市推動觀光產業推出建議,達到永續發展。
本研究探討遊客體驗品質影響知覺價值、滿意度與遊後行為的關係;知覺價值影響滿意度與遊後行為意圖的程度,暨滿意度影響行為意圖的關係以建構古蹟旅遊與小吃體驗品質、知覺價值、滿意度及遊後行為意圖之關係模式,研究對象為立意取樣,調查來台南市觀光的旅客共發問卷900份,有效樣本回收627份問卷。回收率回70%,信度a係數在0.7以上,本問卷採用李克特五點量表,在分析方法的使用上,主要採取統計分析方法,分別是敘述性統計、信、效度分析、ANOVA與T檢定、以及變異數分析。
研究結果發現,遊客對於台南古蹟以安平古堡、赤崁樓、億載金城等三處印象最深,小吃以周氏蝦捲、赤崁食堂棺材板、安平同記豆花等最受青睞,旅客普遍認為台南古蹟、品嚐小吃的旅遊活動最具有獨特性,對於旅遊的整體感受以品嚐地方美食及參觀古蹟歷史建築為最主要目的,懷舊氣氛的營造可以突顯台南市古蹟的特色,可以加強具特色的餐點營造懷舊的氣氛,吸引遊客到台南參觀古蹟及推廣台南市小吃,帶動了地方的觀光發展。我們也建議市政府推動文化觀光時,除了保存現有古蹟,配合導覽解說服務發揮創意提昇觀光附加價值,針對小吃應力求傳統技術的的經營,重視傳統口味、企業化的用餐環境,營造產學文化形成具有發展成觀光潛力與實力的「文化首都」。
The overdevelopment of non-chimney industries over the long term has had a gradual impact on the daily recreation of local citizens, and local culture is often neglected. Meanwhile, its impact on areas of historic interest and scenic spots in Tainan City is also significant. For the tourism industry, rebuilding historic heritage areas into recreational venues constitutes a laudable policy; however, food is not only an essential consumer demand during a tour, but also plays an important role in enriching the attraction of tours. Tainan City is rarely viewed as an eye-catching travel destination for domestic and foreign tourists due to its lack of integral planning, narrow heritage hinterlands, transportation problems, weak promotion of delicacies and local snacks, and languid marketing and corporation management. These facts have motivated this study to analyze the critical aspects comprising tourists' expectations and their actual experiences in regard to the delicacies and historic heritage of Tainan City. In addition, the influence of tourists’ travel experiences and the quality related to their perceived value, satisfaction and post-trip behaviors were also explored in order to propose some suggestions for the sustainable development of Tainan City’s tourism industry.
This study explored the relationships among the influences of tourists’ travel experience and the quality related to their perceived value, satisfaction and post-trip behaviors and intentions, in order to construct a relationship model for heritage sightseeing and local snack experience in terms of quality, perceived value, satisfaction, and post-trip behavior intentions. This study obtained subjects via purposive sampling. A total of 900 questionnaires were issued to tourists visiting Tainan City, and 627 effective samples were collected, for a response rate of 70% and α coefficient above 0.7. A five-point Likert scale was used for the questionnaire, and statistical methods including descriptive statistics, reliability analysis, validity analysis, ANOVA, and T test were used for data analysis. .
Study results show that tourists were most impressed with An Ping Fort, Chihkan Tower, and the Eternal Golden Castle in regard to historic heritage sites in Tainan; whereas Zhou's Shrimp Rolls, Chihkan Mess Hall Coffin Toast, and An Ping Tong’s Sweet Bean Curd Jelly were the most popular local snacks. Generally speaking, tourists appreciate the uniqueness of the historic heritage as well as the delicious snacks of Tainan City. Regarding the whole tour experience, visiting heritage and tasting delicious local snacks are the main attractions for visitors touring Tainan. Thus, the creation of a nostalgic atmosphere can highlight the uniqueness of Tainan City’s historic heritage and food resources, excite tourists’ desire to visit, and subsequently promote local tourism development. In addition to heritage preservation, this study also suggests the use of a tour guide service to increase added value of tourism, focus on the preservation of traditional tastes and food-making techniques, and create a dining environment based on enterprise management. It is also important to foster academia-industry cooperation, so as to facilitate the tourism development potential and competence of Tainan as the “cultural capital”.
