  • 隨著國際社會經濟結構改變,外食已是臺灣飲食型態之普遍現象,本研究旨在研究臺灣外食族對食品標示之知識、使用態度及行為,暨與身體質量指數(BMI)關係,冀能蔚為官、學、產、各界未來相關政策擬定與研究方向參考、企業經營策略、以及國人飲食健康管理之參酌。
    本研究收集每天至少一次外食之樣本,以問卷調查外食族之食品標示知識,及其在便利超商之食品標示使用態度與行為現況,同時了解外食族之身體質量指數。根據二次前測結果,反覆修正問卷後正式施測,以皮爾森積差相關、複迴歸,多變量變異數方法,及獨立樣本t檢定分析。
    研究結果發現食品標示知識會使身體質量指數(BMI)與體重不減反增,此結果雖與其他相關研究相似,但有別於其他國內外研究,本研究結果發現正向之使用態度乃有助降低體重與身體質量指數(BMI)之關鍵。而品牌與營養標示內容為外食族首先察看之項目。本研究發現尚有:
    一、知識與態度呈低度正相關,亦可互為因果之正向影響。
    二、態度與行為無顯著相關,亦無顯著因果影響關係,但證據部分支持態度與行為之構面間有顯著影響關係。
    三、知識與行為之間呈顯著低度正相關,具顯著互相正向影響關係。
    四、知識對BMI 之體重與身高呈低度正相關,並正向影響體重與身高。
    五、態度對BMI 之體重與身高呈顯著低度負相關,並顯著對體重負向影響,以及顯著正向影響身高。
    六、行為與BMI 之間未有證據支持具相關性,或顯著影響關係。
    七、性別、年齡、社會經濟地位、婚姻家庭狀態、自覺體型不同之外食族,各在知識、態度、行為及BMI有其顯著差異。

    As global societies change, people’s dietary pattern in Taiwan have become as FAFH (food away from home) style. This research surveys the relationships between Knowledge, attitude and practice (KAP) towards food labels and body mass index (BMI) among FAFH people group in Taiwan. The research results could provide some valued direction for the official policy, academic research, business strategy, and citizens’ health management.
    The definition of FAFH of this research is the daily FAFH frequencies, including eating-out and take-out meals. Survey the attitude and practice of FAFH people, especially when shopping foods in convenience stores with questionnaires. Two times of pre-tests have executed for adjust the factor variables of questionnaires before the formal research. Apply for the Pearson’s correlations, multiple regression, MANOVA and independent sample t-test with SPSS18.0 of English version to analyze the FAFH data.
    It has found that the tendency of putting on bodyweight and BMI with better food labels knowledge FAFH people as other researches. However, a notable result is the key point beneficial for losing bodyweight and BMI is the positive attitude of using food labels. Moreover, brand and nutrition facts table are the two important food labels contents most cared by FAFH people in Taiwan.
